Green Undhiyun

Undhiyun is a winter vegetable dish having its origin in Gujarat. It’s a melange of a number of fresh greens and vegetables giving the dish a beautiful fresh flavour.

Follow the exact recipe and I assure you that your taste buds will go on a ride!

  • 1/2 cup shelled green peas (tuvar na dana)
  • 1/2 cup green peas
  • 1/2 cup valor papdi
  • 2 potatoes
  • 1 sweet potato
  • 1 cup purple yam
  • 2 cup fresh coriander leaves finely chopped
  • 2 cup fresh coconut
  • 1.5 cup fresh green garlic
  • 1 whole fresh turmeric (leeli hardar)
  • 2 tsp Sugar
  • 3-4 tsp cumin – coriander seed powder
  • Salt to taste
  • Oil to fry
  • Asafoetida

For Muthiya

  • 1 cup fenugreek leaves (methi bhaji)
  • 1 cup besan (gram flour)
  • 2-3 tbsp coarse gram flour / semolina
  • 1/2 tsp Turmeric
  • 1 tsp ginger – green chilly paste
  • 1 tsp sesame seeds
  • Red chilli powder
  • 1 tsp Coriander cumin seed powder
  • Salt to taste
  • 2 tsp Sugar
  • 2 tsp lemon juice
  • Groundnut Oil


For the Muthiya

  1. Finely chop fenugreek leaves and add 2-3 tsp of oil and add all the dry masala. Mix well and add gram flour.
  2. Knead the dough from the mixture and make it into small roundels. (As shown in picture)
  3. Take some oil in a pan and fry them until crisp and brown.

This dish calls for generous amount of oil.

For the Undhiyun

  1. Take all the greens (green peas, shelled pigeon peas and vaal papdi) in a plate and coat them with soda bi – carb and keep them aside
  2. Meanwhile, make two slits on potatoes and chop them into 4 long slices. Similarly chop sweet potato and purple yam into squares. Deep fry these vegetables in oil for only 2 minutes.

3. For the green masala – mix coriander leaves, green garlic, fresh coconut, fresh turmeric, salt, sugar and coriander cumin powder.

4. Take 3 tbsp of oil in a cooker and add asafoetida to it. Once the oil is hot enough, add all the greens to it. Saute them sell.

5. For the first layer add all the fried vegetables. Next layer the vegetables with the green masala. Top it up with the muthiyas.

6. Add around 1 glass of water and 7-9 tbsp of oil. Close the cooker and let it whistle twice.

7. The masala should have integrated well with all the vegetables and the undhiyun is now ready to be served.

Serve hot with Puri, Rice or Roti.
